A Braggot is a mead made with malt. A harmonious blend of mead and beer, with the distinctive characteristics of both. A wide range of results are possible, depending on the base style of beer, variety of honey and overall sweetness and strength. Beer flavors tend to somewhat mask typical honey flavors found in other meads.
OG, SRM and ABV will vary.
A braggot is a mead made with both honey and malt providing flavor and fermentable extract. Originally, and alternatively, a mixture of mead and ale. A braggot can be made with any type of honey, and any type of base beer style. The malt component may be derived from grain or malt extracts. The beer may be hopped or not. If any other ingredients than honey and beer are contained in the braggot, it should be entered as an Experimental Mead. Smoked braggots may be entered in this category if using smoked malt or a smoked beer as the base style; braggots made using other smoked ingredients (e.g., liquid smoke, chipotles) should be entered in the Experimental Mead style.

Clove is being added to a variety of (Belgian) beer styles. Clove is the unopened, nail-shaped bud of tropical evergreen trees. It has a very strong, warm and sweet aroma.
Dosage: 2 to 5 whole cloves for +/- 20 litres wort. Add 10 to 15 minutes from the end of the boil.
Similar to hop additions, the length of boil will adjust the flavor versus aroma contribution of the spice. By boiling the spice longer, the aromatics are driven off, and the flavor contribution is enhanced. Finding the right amount of cloves to use will depend on your particular recipe and your vision for your beer. As always, keep good records of each beer that you make, be willing to experiment, and you will converge on the ingredient mix that yields the flavor and aroma result that you like best.

Fermaid O is certified organic by OMRI. It is an autolyzed yeast nutrient with a high content of organic nitrogen (amino acids). It is formulated without DAP. It is best to add Fermaid O in two doses. Add half the dose at the end of lag phase (at the onset of fermentation) and the other half between 1/4 and 1/3 sugar depletion.
To Use: Fermaid O should be mixed with room temperature water before adding to an active fermentation to avoid CO2 release and overflowing of tanks or barrels. The amount of water used is not critical. Simply add enough to make a slurry.
